Hot Tamale!

I am not a cook! I don't like the cooking, cleaning up or anything about being in the kitchen. Most everyone knows it. I told Keith those exact words the night I met him. I don't think he believed me....but boy, have I proved him right in the last 15 years! Ha!

But every once in a blue moon, I can concoct something that is just downright yummy (if I do say so myself). When I was working the consignment sale a few weeks ago....a girl brought in a casserole that she called "Tamale Casserole". OMG!! It was delicious! I gave her my email address and asked her to send me the recipe (I didn't know her). She said she would. She didn't. But I couldn't get that dang casserole out of my mind so I decided to experiment a little and see if I could do a re make!

I made it a few weeks ago. Keith (who, by the way is NOT a casserole man) loved it. Todd came over and I made some for him and he loved it. So I think I did good!

Anyway...I made it tonight and decided to share the recipe with all of you. If you decide to try it...please let me know what you think!

Ingredients:


Ground Beef .....about 1 1/2 lb
1 jar Salsa
1 Can Niblet corn (drained)
1 package shredded cheese
1 large container sour cream
Jiffy Cornbred Mix
1 egg
1/3 cup milk
onion, salt, pepper

Make the Jiffy cornbread according to box. Set aside to cool. Brown your beef with chopped onion, salt and pepper. Drain thoroughly. In a bowl, mix beef, salsa, corn. Mine seemed a little dry so I added some taco sauce. Layer your meat mixture in a casserole dish. Cover with a layer of sour cream. Cover that with the shredded cheese. After the cornbread is cooled....crumble on top of your casserole. Put back in oven at 400 degrees for 15-20 minutes or until top is golden brown.
